Had to make something with with all the leftover carrots I had from my potato soup. First time for me. Combined two recipes. A little garlicky but not overpowering. Onions, fresh ginger, vegetable stock. No cream added, but plenty thick. Forgot the crusty bread at the grocery store so used fig and olive crackers instead. Some people think it’s too early for soup, but if you crank the air down, you’ll be just fine. ⛄️🌬❄️🥶

Creamy, Healthy Carrot Soup
Never too early for soup when it looks and sounds as lovely as yours does😋😋
I’d forgotten how tasty homemade soups were. And this one I don’t feel guilty having seconds. 😉
Hi Isinatra Your soup looks fabulous. I bet it was really tasty. I like the look of your fig and olive crackers too. Yum! I enjoy soup all year long, no matter what the temperature, I think it's a great option.
Zest
Come on down! There’s plenty!🥕🥕🥕🥕🥕🥕🥕🥕🥕🥕🥕🥕😂
Watch that pizza, M. We’ve got to get you to some cooking classes!
Make sure the gas is high grade. 😂
That looks and sounds delicious Isinatra and the fig and olive crackers sound really yummy too, wish we could get them here. 🙂
That looks and sounds delicious. To me,it's never too early for a good soup- I eat it all year round 😁 The crackers sound good, too🐰
Thank you..I’ll be looking for more soup recipes now. Any favorites for you?
I'm not very imaginative when it comes to making soup, just carrot, leek and potato, and mixed root veg ( carrot, potato, swede, parsnip with onion added)
Sounds pretty imaginative to me. 😁Swede…I’ve heard it before here…any equivalent to something here in the states?
Just googled it. Rutabaga or yellow turnip 😁
Oh! After today, I’ll try anything new. Thanks for googling. 🌸
I dont use a recipe, just cut up the veg, add them to whatever quantity of stock I want, along with onion , garlic and any herbs I want to use🤗
I could build on that, for sure. Atleast it doesn’t call for pureeing, which gets quite messy. 🥴
I usually put it in the blender ( with the lid on if course😁)when the veg are cooked, if I want it smooth. You can add a splash of cream if you want to.
Yes, I can see it coming together now. A splash of cream, I’ve noticed that in several recipes, too. Yum 😋.
If I'm being a good girl I'll put skimmed milk in it instead of cream 😁
And a very good girl you would be! 😉
I didn't say how often though 🤗
I have a good idea…😉
Actually it's more often milk than cream as I rarely buy cream.Honest 🤗
I trust you. Low fat or regular milk?
Low. I never use regular. Ever.
Yes. Low fat or skim for me. But when it comes to cooking something time consuming, I like to make it worthwhile, so I go all in. Unless I’ve made it before and I feel comfortable making substitutions. It’s all good!
Can you use almond milk?
Good question. 🤔 All I can think of is the taste might be altered a bit. The milk or cream called for in my recipe doesn’t add a whole lot except to make the soup a little silkier, but I like the soup unsilky. Done right, carrot soup is sweet by itself, and sweetened almond milk may make it too sweet. You could use unsweetened. I did find a recipe that called for maple syrup, but I passed over that one. Ugh. Lol Maybe some real soup connoisseurs on here has more experience with almond milk. 😁
Hi Superfluffies you can use any milk in soups I use coconut milk and plant based single cream and they all work well. Here's some carrot soup made with coconut milk:

So I'd definitely make some with almond milk. 😊
And thanks for flagging this up Isinatra 😊
Thank you for the info. 👍🏼
Ever try recycled corn oil? When you learn to cook 😂😂😂you can kill two birds with one stone.
Your carrot soup looks totally delicious Isinatra so top marks from me. 😊
Thank you, Jerry. It’s hard sometimes to get those top marks. Always welcomed, though. I’ve picked up a lot of inspiration from Healthy Eating. 👍🏼
Thank you for the compliment, M. But I’m hardly a master. I just can follow directions. On a good day. 😉
Beautiful presentation of a delicious looking soup. I love that its GARLICKY , I'll enjoy it vicariously through you since I cant touch garlic at the moment. Absolutely adore that you dared to be creative and combined two recipes. If this boldness continues, you might just end up becoming a daredevil and jump off a ✈️
Lol Not only no, but heck no! I might be a daredevil in the kitchen, but not in the sky. Unless you jump first!😂
Btw I think the garlic could be left out and it would be fine. The recipe called for allspice and coriander, but I didn’t have any on hand. The fresh ginger really made a difference.
Lol Yes, please let us ALL know how your science experiments come out. Lol Take out fire insurance first and maybe some flood, too.
😂😂
Hi Isinatra ,
Your soup sounds and looks wonderful. I like carrot soup on the side with either a salad or sandwich. Glad to hear that you enjoyed it.
Thank you. Since this was the first time I made it, I wasn’t sure how filling it would be. I had a bowl an hour ago and I’m hungry again. A sandwich or hefty salad would be great alongside it. 👍🏼🌸
You're welcome! What is your favorite type of salad/sandwich to have with the soup?
Hmmm….Reuben sandwich comes to mind. Or a grilled cheese with tomato. Really rich in the combo, though. What would be your suggestion?
Me,too! 😁
Chef Isinatra 👩🍳 your carrot soup looks healthy and tasty and filling. The presentation is 👌Your creating your Veg soups on HE at just the right time as its getting cold here in the UK even though we've had a reasonably warmish day today the evening and nights are chilly. Just the right weather for some warm 🥕🥕🥕 soup on a cold evening for supper yummy 😋
Your description has really set my tummy to rumbling and longing for some cool weather. Love, love.

Looks lovely I love it had some my friend made carrots are a super food I must start cooking again once my kitchen works 😊🙋

Your soup looks really good, and the crackers too, but I just wanted to say I absolutely love your bowl and plate too 🥣
