Had to make something with with all the leftover carrots I had from my potato soup. First time for me. Combined two recipes. A little garlicky but not overpowering. Onions, fresh ginger, vegetable stock. No cream added, but plenty thick. Forgot the crusty bread at the grocery store so used fig and olive crackers instead. Some people think itβs too early for soup, but if you crank the air down, youβll be just fine. βοΈπ¬βοΈπ₯Ά

I'm not very imaginative when it comes to making soup, just carrot, leek and potato, and mixed root veg ( carrot, potato, swede, parsnip with onion added)

I dont use a recipe, just cut up the veg, add them to whatever quantity of stock I want, along with onion , garlic and any herbs I want to useπ€
I could build on that, for sure. Atleast it doesnβt call for pureeing, which gets quite messy. π₯΄
I usually put it in the blender ( with the lid on if courseπ)when the veg are cooked, if I want it smooth. You can add a splash of cream if you want to.
Yes, I can see it coming together now. A splash of cream, Iβve noticed that in several recipes, too. Yum π.
If I'm being a good girl I'll put skimmed milk in it instead of cream π

Low. I never use regular. Ever.
Yes. Low fat or skim for me. But when it comes to cooking something time consuming, I like to make it worthwhile, so I go all in. Unless Iβve made it before and I feel comfortable making substitutions. Itβs all good!
Can you use almond milk?
Good question. π€ All I can think of is the taste might be altered a bit. The milk or cream called for in my recipe doesnβt add a whole lot except to make the soup a little silkier, but I like the soup unsilky. Done right, carrot soup is sweet by itself, and sweetened almond milk may make it too sweet. You could use unsweetened. I did find a recipe that called for maple syrup, but I passed over that one. Ugh. Lol Maybe some real soup connoisseurs on here has more experience with almond milk. π
Hi Superfluffies you can use any milk in soups I use coconut milk and plant based single cream and they all work well. Here's some carrot soup made with coconut milk:

Btw I think the garlic could be left out and it would be fine. The recipe called for allspice and coriander, but I didnβt have any on hand. The fresh ginger really made a difference.
