They say that one thing leads to another and one of my neighbours gave me a jar of home made plum jam made with plums from her garden so I thought I know what this would go down a treat with so I made a loaf of gluten free fruit bread.
Here's the recipe:
300g gluten free brown bread flour I used Doves farm.
50g ground quinoa
300ml lukewarm water with a teaspoon of brown sugar and 2 heaped teaspoons of dried yeast left to wake up and go frothy on top.
1 desert spoon brown sugar
1 tea spoon mixed spice
1 Table spoon of olive oil, 1 tea spoon salt
3 large free range eggs
125g dried raisins
Mix thoroughly in a food processor and put in a large loaf tin allow to prove 35 mins and bake for 35mins 180C and then enjoy. I do like the smell when anything with mixed spice is baking in the oven a very autumnal smell and it does go down a treat with the plum jam and a mug of tea.
