I haven't been shopping in the supermarkets since March so to make up for the lack of choices I've been buying dried apples and pears as I eat lots of dried fruit and love sultans and raisins anyway. I'm finding that dried apples and pears are a great store cupboard must have.
I baked this yesterday and really like fruit bread with strong cheddar cheese or home made jam. π
Here's the recipe:
350g gluten free brown bread flour I used Doves farm.
300ml lukewarm water with a teaspoon of brown sugar and 2 heaped teaspoons of dried yeast left to wake up and go frothy on top.
1 desert spoon brown sugar
1 tea spoon nutmeg
1 tea spoon cinnamon
1 Table spoon of olive oil,
1 tea spoon salt
3 large free range eggs
125g dried raisins
100g dried apple diced
Mix thoroughly in a food processor spread mix into a large loaf tin with some slices of dried apple on top with a little maple syrup to give a nice glaze, leave to prove 35 mins and bake for 35mins 180C.
Fruit bread is a great alternative to cakes and cookies as its filling without needing lots of sugar and I love fruit bread and was very pleased with how this turned out.
