I haven't been shopping in the supermarkets since March so to make up for the lack of choices I've been buying dried apples and pears as I eat lots of dried fruit and love sultans and raisins anyway. I'm finding that dried apples and pears are a great store cupboard must have.
I baked this yesterday and really like fruit bread with strong cheddar cheese or home made jam. π
Here's the recipe:
350g gluten free brown bread flour I used Doves farm.
300ml lukewarm water with a teaspoon of brown sugar and 2 heaped teaspoons of dried yeast left to wake up and go frothy on top.
1 desert spoon brown sugar
1 tea spoon nutmeg
1 tea spoon cinnamon
1 Table spoon of olive oil,
1 tea spoon salt
3 large free range eggs
125g dried raisins
100g dried apple diced
Mix thoroughly in a food processor spread mix into a large loaf tin with some slices of dried apple on top with a little maple syrup to give a nice glaze, leave to prove 35 mins and bake for 35mins 180C.
Fruit bread is a great alternative to cakes and cookies as its filling without needing lots of sugar and I love fruit bread and was very pleased with how this turned out.

Well gardening is a little difficult now in his garden but in late Spring he starts growing all sorts from Herbs to Peas and Salad π₯
Thank you my gran taught me to cook when I was little and I was a single working dad so learnt to literally pull my sleeves up in many ways. Good for your son and that sounds great to me growing a few things.
Yes Grandmas are good teachers Jerry! And a single dad? That must have been a tough time for you to juggle everything! I am glad I wasn't a single Mum with 4 children here! I would have moved back to Germany then with the help of my Mum and Dad! Life at times π
What a fabulous recipe Jerry and your fruit loaf looks amazing. I've not seen dried pears in the shops so I'll have to have a look, if they agree with me then that'll be another fruit I can eat.
