Fatty liver is caused by what's called 'de novo lipogenesis' the body's way of making new lipids which contain the building blocks for new fat. These are produced from the sugars which are the building blocks of carbohydrates. You can look up the process on the Web but it's pretty complicated.

The way to cure fatty liver is to reduce your carb intake, especially sugary foods, alcohol, bread and fruit juice. These are all foods which raise your insulin levels quickly and drive the process. Read Aseem Malhotra's book "The Pioppi Diet" to get you started.
