We had a post last week by Hidden about tofu, ironically my vegan neighbour asked me if I ate tofu and I said I've never bothered and she enthused about it and said cube it and cook it in hot fat to go crispy outside and it's amazing and gave me a pack. So I did and was really pleased with how it turned out.
I had a curry made with a yellow pepper diced onion curry spices with chilli a tin of tomatoes with some sliced broad beans that my neighbour also picked and gave me this morning. I thickened it by adding a little ground quinoa and the water from the beans.
I washed the rice and boiled the wild and black rice together.
The tofu I diced and cooked in olive oil that was hot enough to crispy it gently and then added it to the curry.
I enjoyed it so will definitely try some other tofu recipes. this is gluten free and plant based. π
That really does look good Jerry. I tried tofu but thought it didn't like me but that was before the low fodmap diet so it could have been something else, I'm going to have to give it a go.
Some fabulous ingredients in your meal.π
Enjoy your evening.

Well something I'm definitely going to try again, particularly on how to cook itπππ
I usually add tofu to my curry and it goes well with everything mixed together. If you use a protein powder and put it on the tofu while it's cooking, the peanut butter flavor will spread on the tofu cubes/pieces. Really good!
You're welcome! I tried it a few times and it was really good. You may need a measuring spoon so you don't use too much the first time and see how it goes for you. Have fun with the experimenting!
I tried out Tofu last year at a Japanese restaurant and also eel as well which I enjoyed.
I have enjoyed cooking at home as well during lockdown and will keep it up for the future.
I was glad when they said how the self service restaurants have changed so a member of staff puts the food on your plate for you but if you want more you ask a member of staff rather than serving yourself from a bain Marie.
I think a lot of these all you can eat places due to covid will go out of business myself and I feel for some of them it's good riddance really!

Good for you for cooking more at home and I agree about these eat as much as you want eateries as itβs not healthy.
I think weβve all learnt from being in this pandemic so letβs hope we benefit when we finally beat it. ππ
Thank you Veeee , I just gently softened the opinion and pepper in olive oil added the curry spices a little quinoa flour to thicken with the tomatoes and par cooked sliced beans and left that cooking slowly so the flavours infuse.
I cooked the rice separately and diced the tofu and fried that until the outside was crispy and added it to the curry and served with the rice. ππ
Thank you RosemaryandParsley I've tried it before and wasn't impressed but was pleased I tried it cooked like this as I look forward to trying more dishes with it. ππ
What brand of tofu did you use? I've been 'glutened' by some brands of tofu that are produced in same production line as tofu that is crisped with wheat flour. Very wary of all brands. Was this brand ok?

Hello Benjamin, I've some friends and neighbours who are vegan and GF and they gave me the smoked tofu I will ask them and get back to you. I am very sensitive to gluten so avoid foods manufactured in premisses that handle gluten.

Thanks Jerry. I've tried one brand, I was ok. Then recently had Tofoo brand which claims to be GF - it wasn't. They have a lot of gluten in the same factory. Great if you can find out the brand, but don't worry if you can't.
