Gluten free Apple cake with ground almonds

Hi everyone,

I bought some lovely Bramley apples and decided to make a cake using :

55g ground almonds

110g GF self raising flour

2 eggs

100g butter

100g brown sugar.

I added to this the diced par cooked apple I had 4 large ones with raisins nutmeg and cinnamon there was more apple mix than cake mix so its very like a bread pudding in texture and I like that as I love Bramley apples. I put flaked almonds own top before baking at 175C for approx 45/50 mins until cooked through.

I had some warm with cream after dinner last night and it was very nice indeed.

I've just come across this recipe (it looks so delicious!) and I was also thinking about vegan subs. Maybe flax or chia eggs and flora instead of butter? I'd be interested to hear how you have adapted it πŸ™‚

Thanks for inquiring, I believe your way is the exactly the way I'm going to make it... except I tend to use cold pressed sunflower oil in cakes more often than margarine. However, I must admit, I haven't had a chance to buy the raisins yet, I have my daughter do the shopping for me because we are at some distance from the shops ... will definitely try and make it this weekend and I'll tell you how it turns out.

Dear Beatlesforever (your nickname reflects the way I feel !) Anyway, I got around to making Jerry's cake with a few adaptations to veganize and it turned out delicious, albeit not as good-looking as his. It lasted 9 minutes before it was eaten up, totally!!! . Let me know if you make it.

This is my attempt:


130 g (100g all purpose flour + 30g whole flour)

2 vegan eggs (2 TBS flax seeds in water)

100g sunflower oil

100g brown sugar

2 or 3 TBS soy milk, as needed

Add to mix:

4 large par cooked apples (diced and boiled 1 minute with 2 TBS sugar)

raisins 1/2 cup (soaked a few minutes in the water where I boiled the apples)



Put 55g almond flakes on top

Bake at 175Β°C for approx 30-45 minutes

I finally managed to make my version today:


130 g (100g self-raising flour + 30g whole spelt flour)

1tsp baking powder

2 vegan eggs (2 TBS chia seeds in water)

100g vitalite spread, melted

100g brown sugar

2 TBS almond milk

1 tsp vanilla extract

Add to mix:

7 smallish par cooked apples (diced and boiled 1 minute - no sugar because I forgot!)

Mixed dried fruits 1/2 cup (soaked a few minutes in the water where I boiled the apples)



A big pinch if almond flakes sprinkled on top (all I had!)

I used a loaf pan and baked it at 160C fan assisted for around 35mins.

This is the BEST apple cake I've had in ages! Hats off to Jerry and INK45 😊

That looks and sounds really nice Jerry. Also, I love bread pudding and I so miss my mum's baking of it years ago and your saying "it's very like a bread pudding in texture" took me back quite a while. x

Am I the only one who didn't know what par-boiled meant? I looked it up and it's like this: "Place all slice and apples into lemon-water bowl between handling. Heat a large pot of water and a 1/2 cup of sugar on the oven. Transfer apple slices into boiling water and par-boil for about a minute. This parboiling will allow the apples to retain more moisture when cooking in the pie crust."

Thanks Ali and it was smashing warm with cream, especially as the smell when baking anything with cinnamon perks my appetite up... 🌈😁

oh yes I remember this from when you posted it. Looks delicious in fact I did buy sultanas. Your fruit cakes and tea look delicious and make me want to pop round and have a slice!
