Gluten Free Banana, Blueberry and Almond Cake

Hi everyone,

We had some gorgeous banana and blueberry loaf made by Kaz recently. So, I decided to make a couple of fruit cakes as I had some bananas I wanted to use and I'd bought too many blueberries.

I used 75g ground almonds, 125g self raising gf flour, 125g butter,125g unrefined sugar, 3 free range eggs, 2 large bananas,150g blueberries and a 1/2 tea spoon mixed spice with flaked almonds for the top. I added the blueberries and sliced bananas last and mixed in gently and baked for approx 45/50 mins. until cooked through.

I went for a walk and walked around 3 miles this afternoon so a slice with a cuppa went down a treat after that. πŸ˜€

This is how it turned out.

It turned out very well Jerry. Your cakes always make me want to go and bake a cake. Glad you got out, going for a walk makes a cup of tea and a piece of cake taste even nicer πŸ˜‹

Thanks Ali, you can handle yourself in the kitchen so that's a great compliment. I use the same basic cake recipe whichever fruit I add.

Absolutely walking in the fresh air is great followed by tea and cake makes it even better.

Even better! I just have to do one that's blueberry and strawberry eventually as a substitute for bananas since I can't have the bananas (too much potasium).

Never tried it before, so I'm not sure how it's going to turn out. It's sometimes a good idea to experiment now and then. What do you think? :-)
