This was my leftover piece of gluten free quiche from dinner last night. The crust is made with brown rice, Swiss cheese, yellow mustard, liquid eggs and bac’n pieces with nutmeg. It was really good after being put in the refrigerator for over night and part of this morning until early afternoon’s lunch.
The quiche went well with a Greek Strawberry yogurt on the side. The total carbs for lunch today was 36.

Quiche is good for breakfast, lunch or dinner! So versatile - easy to switch up with different veggies and cheeses, add meats if desired.
The gluten free quiche I make is crustless. Yours looks good - with a rice crust. Yum.
Thank you, LindaP50 . The rice is brown rice we usually use unless we don’t have it in the house at the time for quiches. Both are good for crust.😀👍
