Quiche with Rice Crust: Dinner ๐Ÿฅ˜

This was what I had for dinner tonight. It was a quiche with long grain wild rice, sliced mushrooms, cheddar cheese and eggs mixed together. I had string beans, salad with fake bacon bits and Italian dressing thatโ€™s fat free. I had a parfait of sugar free chocolate pudding and Greek raspberry yogurt on the bottom on the side. Everything was really good and I will have the leftover slice of quiche for lunch tomorrow afternoon.

That looks delicious! ๐Ÿ˜‹ do you need to pre-cook the rice?

Thank you for saying that. You need to get a pan/dish/bowl and put the rice with the eggs and other items you want to add to it for cooking in the stove/microwave. You may have to warm the rice in the bag up for 90 seconds. Each brand/type of rice has different temps.. :-)

That looks so yummy and always good to have some left for the following day.๐Ÿ˜Š

I totally agree, most things taste better the following day, it's like a curry where the flavours infuse even more once they've been left for a while. :)

Thank you for that one! It'll be great! :-) If you try the rice crust, I recommend the brown or wild rice flavors. The white rice is good, but not as exciting. :-)
