Hi everyone here's some burgers I made for dinner tonight, I often use chickpea flour but with the flour shortage I used ground almonds instead.
I made these with cooked red and white quinoa and split yellow lentils. I gently fried some white onion with hot chilli and green pepper then mixed it with the cooked quinoa/lentils and added ground almonds and chia seeds and whizzed it up in my food processor then formed into balls and flattened and then gently cooked in olive oil. If you cook potatoes chips with fresh potatoes and in good quality oil they have more vitamin C than a couple of eating apples and considerably more calories but thats not an issue for me.
I've made these before but baked them so it was nice cooking them like this as I really fancied salad with chips as it's warming up out there.
These are gluten free and plant based and healthy.
