Here’s what I had for dinner tonight it’s a hot pot with local new potatoes baby carrots and a cauliflower with quinoa and red lentils. I bought the veg yesterday and the carrots were a little bunch, they’re all local so no plastic wrapping or waste and the paper bags go in my wood burner.I par cooked the veg, added the water from the cauliflower and carrots to a table spoon of rice flour mixed in a little cold water some low salt bouillon yeast extract all baked with some slices of potato on top just for extra crunch.
I will freeze a couple of portions and have plenty for tomorrow and I like that but I guess it depends on how we see cooking for ourselves. I find cooking very therapeutic with the pandemic as it keeps me busy and my home smells homely.
