This is what I had for dinner tonight its onions mushrooms cooked until they start to caramelise then I added dices sweet peppers and frozen mixed winter veg and cooked slowly with a stock made with yeast extract and gram flour mixed in a little cold water first. I had some baby mishaps potatoes roasting in their skins at the same time. You can dust roast potatoes with flour to make them crispier so I dusted these with ground almonds to give it a nutritious crunch as every little helps.
This is gluten free and plant based. π
