First lie in for a long time and actually got a weekend off work with no ‘commitments’. Starting my day with a yummy breakfast/brunch of scrambled eggs, mushrooms and crunchy coated tomato ( 1 tsp cornmeal, pinch celery salt and pinch unami spice, dip tomato slices in to coat) cooked in 1 tsp avocado oil ( not a prayer i will change to spray oils, personally feel they taste artificial, wreck your pan and spoil the flavours of food - like i say, only my view though, i know many folk like them). Whole plateful comes in at just 290calories and was lovely.
