Here are all ingredients I gathered to make some healthy gluten free and vegan oatmeal chocolate chips cookies for the holiday weekend in US. (No butter, I replace with coconut oil).
1 cup of rolled oats
1 1/4 cup of all purpose flour
1/4 cup of almond flour
1/4 tsp of xanthan gum
1/2 cup of vegan eggs
3/4 cup of coconut oil
1/2 cup of brown sugar
1/2 cup of chocolate chips (you can add more if you like)
Chill mixed dough in the fridge for at least an hour. Bake at 350 F for 20 mins.
I like to have a cup of tea with a cookie.😋
