Today I created this wholesome and healthy Meditteranean style salad for my Sunday dinner, with simple and essential ingredients to make this such a fullsome meal to eat!

I had some left over salad that I really needed to use, so I decided to use my leafy salad with boiled eggs, sardines and a concocted salad dressing that made my boiled eggs taste so yummy!

Ingredients:

Leafy green salad

Peppers

Tomatoes

Tinned tomato sardines

2 boiled eggs

Salad dressing:

1 tbsp Olive oil

3 tbsp Red wine vinegar

1 tsp Dijon mustard

1 tbsp Greek yogurt

Seasoned with a bit of pepper. No salt.

This has made a light, Sunday Tea. And looked very colourful!

I do like sardines in a sandwich, but I love them in lots of things, like Salads and Omelettes.

They are such a versatile food to use!

Sardines on toast is one of my favs too- love using extra ingredients to spice and flavour it up! xx

I like to add a bit of black pepper, lemon juice and some herbs. Could also top with some grilled tomatoes. 🙂👍

Hi happy man and Taurus lady your salad looks lovely but I'm afraid I can't have sardines other than when straight out tin as I can't resist a pick when giving pixie his he doesn't like the scale so I take it off he loves the tomato juice on them they have too much skin on for me so all I'm.able to have is a lick in between the skin and bone I'm very silly and screaming I know and when had in prepared sandwhich as with tin salmon from.someone else I manage to eat ok my mam.likes them.on toast 🤗😻🤔😺

PixiesMummy_I have to admit, it is a temptation to eat the fish straight out of the tin!But I think it's such a waste to not make a meal out of it!!

Me too, but I think they have a stronger flavour so I prefer them with a salad and new potatoes. I like to get all tinned fish in spring water if I can. 🙂👍

I’m not sure, it’s been a while since I bought them. Whenever I’m buying tinned fish I always check to see if I can get them in spring water as I think it’s the most healthy way. 🙂🤔

Ooh, I can't have it straight out of tin- it's too much of a delicate food to have like that, just like tuna!

Imaan, Happyman4, you can do anything with Tomato sauce. I basically drained away the tomato sauce from the sardines and made my own little salad dressing!

I'm sure you can make so much more with the tomato sauce, especially by making it hot!

I only buy it in olive oil or water which I always drain. I used to love dipping things in hot sauce condiments before my gastritis so hence the suggestion to happyman;)
