I really like cream cheese and sometimes eat it on toast with honey as it has a cheese cake flavour but not so rich. I bought some cream cheese and decided to just substitute cream cheese for butter and I added 1/3 less sugar and mixed flaked almonds with maple syrup to glaze the top.
Here's the recipe:
150g plain white GF flour
60g ground almonds
180g tub cream cheese
1 egg
50g brown sugar
few drops of vanilla extract
150g raisins
For the glaze:
2 Table spoons Maple syrup and 50g flaked almonds
Whiz everything up in a food processor and spread into a baking tray and bake for approx 25 mins 175C until cooked through.
The ground almond and maple syrup topping is lovely and compliments the cookie and I think with this lockdown we deserve some comfort food thats also nutritious.

Mmm.. they look intriguing and tasty Jerry. I'm like you and baking much more than usually. I made cheese cookies today. It's a crazy simple recipe, just some butter, flour, grated extra mature cheddar cheese and a little dried red pepper flake, just whizzed up together in the food processor, rolled into small balls and flattened a little then baked in a hot oven for 15-20 minutes. I guess if you piped them into lengths, they'd be cheese straws! π
