Food planned for today, I had the rest of my low carb pancakes with grilled bacon and sugar free maple syrup. Dinner is going to be fake KFC using almond flour and spices for the coating, coleslaw and hallumi fries.

What I have to say is how commendable your diet is your pancakes sound fantastic as does your fake KFC as yours sounds much nicer and healthier. If ever you want to post any photo's then we love photo's of healthy food on here for some reason.

I am pleased that you love a low carb diet as food is our fuel mentally and physically so it is very important and am pleased that it works for you.

As Hidden had said, I've been a type 1 Diabetic for 37 years and I eat a low carb-high protein diet, use two types of insulin and a CGM (Continuous Glucose Monitor) system to keep the blood sugars even through the day and evening hours (right now, I'm not feeling well). The CGM helps alert if I'm dropping and if I need a snack. Has your son's doctor suggested he use one for tighter control?
my son was diagnosed when he was aged 40 (6 years ago), he was really poorly at first and not being in the UK did not help, but since then he has worked really hard on health and exercise and when he has his check ups they are really pleased with him, so at the moment no other interventions are required.
