I’m quite proud of myself today as I was in work but still managed to eat three healthy meals and a few healthy snacks.
Breakfast was porridge, almond milk, blueberries, strawberries, raspberries, blackberries, sunflower and pumpkin seeds. Instead of my usual cuppa I had two cups of hot water with lemon and lime slices.
Lunch was one slice of organic three grain bread with crunchy almond butter and chia seeds and a side salad of mixed leaves, cherry tomatoes, red pepper, radish, carrot, linseeds and pumpkin seeds. I took some flaxseed oil and balsamic vinegar in a little container too as a nice dressing.
Dinner was a made from scratch organic chicken curry made with onion, garlic, turmeric, cumin seeds, chili powder, ginger, organic coconut milk, red chili, broccoli and yellow bell pepper served with cauliflower rice - which I hadn’t tried before but was really delicious!
I’m trying to increase my hydration too and found it easier to drink more water after I infused it with cucumber and mint.
Snacks were apples, a tangerine and some almonds.
I’m now chilling with a mint matcha tea. It’s hard eating healthy while still in work, I’ll be getting up half an hour earlier tomorrow to prep my lunch!
I’m managing all of this now but have to have a full hysterectomy on May 21st so will be relying on my other half and my son to keep up the healthy eating plan - which will be interesting! 🤨
