Hi Andy, a great salad here and I love the sound of beetroot humous and I've never had strawberries with a salad before but I bet they're great as they're sweet and moist so thanks for sharing this as it looks delicious. 😊
Beetroot hummus sounds lovely! Do you cook the beetroot before adding it to your mixture? I’ve been told beet greens are really good so I’ve been blending them into juices but find I’m left with a surplus of raw beetroot so I’m looking for ideas on how best to use them - hummus sounds like a plan x
This was pre-cooked organic beetroot. But, yes cooked beetroot works well. Two of them to a can of chick-peas.
