For today, I made my pumpkin soup in my pressure cooker. Remove the skin was the hard part! πŸ˜…

I remember my grandma always said if you eat this, you will be so smart. πŸ˜‚ I love this soup for many health benefits and great skin and eyes. πŸ˜„β€οΈ

Main ingredients:

Organic Gluten-free, low sodium vegan vegetables broth.

Oyster mushrooms, green onions, and fresh pumpkins.

Dessert: Dragon fruit and chrysanthemums mint ice tea.

Here are some of the health benefits I love about pumpkins:

Pumpkin is high in vitamins and minerals while being low in calories. It’s also a great source of beta-carotene, a carotenoid that your body converts into vitamin A.

It contains the antioxidants alpha-carotene, beta-carotene, beta-cryptoxanthin and many others, which may protect your cells against damage by free radicals.

It is high in vitamins A and C, which can help boost your immune system. Its supply of vitamin E, iron and folate may strengthen your immunity as well.

It is packed with nutrients and yet has under 50 calories per cup (245 grams). This makes it a nutrient-dense food. It’s also a good source of fiber, which may suppress your appetite.

Lunch today was another cheese sandwich with mustard and a Greek yogurt on the side.

Dinner tonight will be Sloppy Joe’s and maybe another Greek yogurt, but I will have to see what happens when the time comes. I will try to get a picture of the Sloppy Joe’s tonight for everyone.πŸ˜€πŸ‘

I find if you roast pumpkin first, I makes it a lot easier to remove the skin :)

I know what you mean, I think I went a few years without buying any because it was such a pest to do!

I tend to roast it when the oven is on for something else, then you can scoop the flesh out, blend and freeze for later use :)

Yes I was struggling even I got the biggest knife I had in the kitchen. πŸ˜…

This is great as sometimes, they don’t have the small size one and I had to cook the whole thing πŸ˜‚ Plus I can make pumpkin pie for dessert. πŸ‘

Looks beautiful, I do love the pumpkin as a dessert to.I was planning to make a Greek soup for breakfast today that the children love..Egg Lemon soup, they like to have it with boiled chicken, but I quite like it on its own now. Very tasty and refreshing 😊

That's a lovely photo and great description yes it's important we protect from free radicles I used to take bit E but can't find any I must eat more food like that unfortunetely yes the pumpkins are difficult to peel I'm.hoping to post soon if I ever eat anything healthy πŸ˜πŸ€·πŸ€¦πŸ™„πŸŒœπŸ›Œ

Good morning Koko pixies woke up again now 5.15 I'm tiredout he going out bathroom.window can let himself in I've just done his breakfast was on TV about some cat foods making them.ill I'll look.full story up,I take omega 3 bit D occasional iron as I had problem as don't eat meat only when mam does a pixie pie lol, I take glucosimine/chrondotine when can find the flipping stuff for me bad knee cartilage damage from kneeling on wood DIY when young, and yes I sure need that omega 3 for my brain lol it's in my avacados tho, I think I'll have a beansprout omelette for brunch as they need using up, have a great day I'm.going back in the land of nod now I don't think that pixie boy will be long it's freezing here, the jet streams playing up rain like winter, I lost my tooth while prep veg last week I found it in the bin amongst it lol glad I'm getting a bridge tooth September dentist πŸ˜‚πŸ€ͺπŸ˜¬πŸ›ŒπŸ€¦πŸŒœI'll ask mam.to do a pit soon 🧑😻

You make sure to take your supplements and vitamins as we don’t really get enough at certain age.

Love that you took that combination glucosamine/chrondotine. People kept missing the chrondotine which is a game changer πŸ‘

We are all lacked of Vit D which is very common. I have to take vit D 5000units every day.πŸ˜… yes omega 3 too I take. Oh don’t forget collagen, I take some biotin and collagen drops and Vital protein powder collagen for my skin health, bone loss, joint pain. πŸ˜πŸ‘

I just remembered that I roasted a butternut squash yesterday when I cook my spinach and mushroom pie, I always try and make full use of the oven. I thought I'd make butternut squash mush today with something, but now am thinking soup 😁

I did enjoy an ice cool coconut water this morning at 3am when I got up😊

Bought 12 yesterday, cut the husks in the garden. Very sweet and fragrant, just going out to the veg market for a few things πŸ‘πŸ˜Š

Okay I watched the YouTube Greek lemon egg soup, do you add pastas into it and chives? It does look yummy and something I can make to try it out. πŸ˜‹

I've never seen or heard of it been done with pasta, plain white rice is how I ever known it done with, jasmine rice is perfect. We sometimes have chicken with it, but my kids much prefer it with seafood, prawns, fish cake, calamari, cattle fish balls is what they like best.

I end up going shopping in the supermarkets because the markets had been closed down due to covid, and my wife cooked it for the kids breakfast, so no photo.

The important thing is to make it how you like it with how many eggs and lemon juice you prefer and how thick you like it. I will make it again for them in a few days. 😊

The video I watched she added pasta and chicken breasts but that’s okay maybe that’s her style. But I do love how the soup looks like. I’ll try to make it sometimes. πŸ˜‹πŸ‘
