Happy Thursday everyone! Hope your day is joyful so far! π€
For today, I made my pumpkin soup in my pressure cooker. Remove the skin was the hard part! π
I remember my grandma always said if you eat this, you will be so smart. π I love this soup for many health benefits and great skin and eyes. πβ€οΈ
Main ingredients:
Organic Gluten-free, low sodium vegan vegetables broth.
Oyster mushrooms, green onions, and fresh pumpkins.

Here are some of the health benefits I love about pumpkins:
Pumpkin is high in vitamins and minerals while being low in calories. Itβs also a great source of beta-carotene, a carotenoid that your body converts into vitamin A.
It contains the antioxidants alpha-carotene, beta-carotene, beta-cryptoxanthin and many others, which may protect your cells against damage by free radicals.
It is high in vitamins A and C, which can help boost your immune system. Its supply of vitamin E, iron and folate may strengthen your immunity as well.
It is packed with nutrients and yet has under 50 calories per cup (245 grams). This makes it a nutrient-dense food. Itβs also a good source of fiber, which may suppress your appetite.
