For lunch I switched it up a bit and made a quesadilla! Sadly, my tortilla ripped when I took it out of the freezer, but I still made use of it! It was delicious and so satisfying

Yes, it would be great with some salsa as well! Unfortunately, the tortillas are not gluten free - they are just organic sprouted grain and flourless. I am sure it would be great with gluten-free ones, too!
Hi Kikivball, a lovely lunch here, Ezekiel was an Old Testament Prophet where the ingredients are:
Take thou also unto thee wheat, and barley, and beans, and lentiles, and millet, and fitches, and put them in one vessel, and make thee bread thereof.
And I've always wondered what flitches are, but know that modern Ezekiel products use whole grains and beans so are wholesome and healthy. So I'm glad that you enjoyed it and I'm glad you're posting photo's...😊
A bit of googling suggests it meant 'spelt' which is fairly plausible. Indian cuisine has a lot of bread recipes involving mixed grain and legume flours - I imagine that recipe is quite tasty!
Quesadillas are just great for a quick healthy snack. Flour tortillas have a surprisingly low GI and don't weigh much anyway, so personally I use those. I'm intrigued to know there is such a thing as a flourless tortilla though , I might have a go at making some.
