Hi everyone. Since itβs still warm here, I wanted to have something cold for dinner. So, it turned out that we had a 7 layer dip with gluten free crackers for myself and my mom had matzah pieces for tortilla chips substitutions because we donβt have any tortilla chips right now. Along with the dip, we both had Mango Greek yogurt for dessert. I had hot tea on the side along with a glass of water. The salsa was mild. Entire meal was 55 total carbs..πππ₯ππ¦

That dip looks like a meal in itself
Thank you! It was really good and it had been a while since we had it for a meal.ππ
I haven't had that in a very long time
Do you like salsa and green olives?ππ
Separately. Together not so much. Black olives are more to my liking when it comes to 7 layer dip.
Hopefully the mango yogurt was cooling and refreshing enough to counteract the warm night while eating. Your dip looks stellar
Awe! Thank you! It was really good and helped with the heatwave weβve had for a few days, now. πππ₯
We're on day 2. Unusually warm for june
We're still in the low 70's here. But the hot weather is not far away I fear
Be careful when youβre out and you will get something for meals.ππ
Careful is the key word. Our local mountain lion has been making the rounds lately. So I don't stray too far away from home. Unless I'm armed.
Thatβs good! Donβt forget to bring water with you so you can keep cool going back and forth from getting your dinner plans.ππ
Stay alert unless you want to end up as dinner
Par for the course.
Hi Leah,
That is very creative way to make a healthy 7 layer dip this way. It looks so delicious, mild and light. π
I love salsa and olives combo in this. Tortilla chips will definitely go perfectly with dip.
Hot tea is what I am having right now too with honey. So soothing.
Thank you for sharing and inspiring us always Leah πππΊ
Thank you, Koko! I missed having the dip for a while. Itβs a good, cool and quick idea for a meal on a warm day/night. Enjoy!ππ
Youβre welcome Leah. It is definitely quick and healthy meal esp during these summer months. Iβm glad you and your mom enjoyed it and probably saved some leftovers for lunch tomorrow. Have a good rest of the evening! ππ
Unfortunately, we donβt have leftovers, but we can do the dip, again in a few days from now.ππ
Enjoy your evening, too, Koko!ππ
Thank you Leah ππItβs okay no leftover today then tomorrow you can make new stuffs and share with us ππ
Sounds like a great plan to me. Will see what happens when I can.ππ
No pressure Leah, I will wait ππ
I think that in the US there are some terrific 'layered' things to eat, and I'd love to know exactly what goes into a 7 layer dip Leah! Sounds so interesting. Glad it all tasted good! We ate out yesterday as we were visiting a little town on the edge of the New Forest (an ancient forest first planted for one of our Kings of long ago to go hunting in!) Now it's a National Park for us all to enjoy. Anyway I digress. There's a very nice fish and chip shop there so we had those al fresco for our main meal, sitting in the town square.
Perfect, your choice sounds great but I see it's a very versatile thing! πππ
It's really good and a little spicy, but still very tasty and really helpful for warm temperature nights. Next time, I will have to see if I can get blue chips/tortillas and use them, too if we don't have crackers.
Hi Leah,
Your 7 layer dip sounds delicious with those crackers. Glad you enjoyed it.
