Hi everyone. Last night, we had a quiche made with brown rice for the crust, fake bacon bits/chips, two types of cheddar cheese and liquid egg whites. On the side, we all had French style cut green beans and Organic apples and hot tea to drink. The dinner was 38 carbs. when you add everything up together.
For lunch today, I plan to have the leftover quiche and green beans with a Greek yogurt.

Sounds very good that Leah, I have just had a first salad 🥗 of the year as it's been the warmest day so far of the year hopefully more to come . Clive X 🤗
Can't remember what it was, but it was something that you'd think would've blended. Not sure why it hadn't. We had to do the warm up twice before eating it because it helped get some of the ingredients to be better in cutting.
With a Strawberry Greek yogurt and the leftover green beans, the total of carbs. is 46 for the meal today. It's going to be less for dinner tonight since we will have hotdogs, gluten free bun and pinto beans with barbecue sauce and maybe some fruit on the side for dessert. Will see what happens.
I can't wait to see what we do with the fruit. We have large strawberries and Organic apples, so I may try to turn them into a small fruit salad, or just have one or the other since they both are big in size.
That sounds really nice . I had a vegetable rice dish -I steamed onion & pepper in some de-juiced orange & cooked it down & added aubergine which I precooked in the oven & then heated up used the rest of the dejuiced orange cooked down until it became a sauce with some lemon & herb rice & poured it over
whenever i cook onions/pepper/mushrooms in a frying pan I steam them I dont fry them
Thank you! Everything was really good and everyone enjoyed the leftovers this afternoon today, too.
Your meal sounds great, too. Do you have this for a lunch or a dinner mostly? When -- every week(1x) or multiple times (once during the week and sometimes on a weekend day)?
those veg are a regular on my shopping list -so i like to make it for tea -an evening meal -its easy to do & it was a healthy one
i do try to eat reasonably healthy & cook things in the oven or grill as an alternative to fry (or when it comes to cooking veg in a frying pan -steam them)
Hi Leah, I’m glad you enjoyed your leftovers as they are always the best 😋 Love French style cut green beans, I usually sauté with mushrooms also. Thank you for sharing with us! 😊🙏
Thank you for saying that, Koko. I appreciate it very much.😀👍
It’s a first time in a while that we had French style green beans for a side dish with quiche. We usually get the regular green beans, but it’s not a bad thing to have happen.😀👍
You’re welcomed Leah. Your quiche is always fantastic as I saw in your posts before. It’s always great when we discover something different and tasty. 😁👍
Yes, Koko, you’re right about that. If we like something, we can do that type of meal and slightly change it now and then to keep it interesting and different.😀👍👍
