Most likely highly difficult but not impossible. Will depend on insilun<-->glucose efficiency currently in the system and how the diet/pharma tilts that axis. Done wrong high fat (even good fat) with moderate carbs, sure shot way of failure than success.
it is worthwhile to experiment with medicine and diet variations by checking sugar levels yourself and come to conclusion best for your condition as diabetes 2 is progressive disorder and 7 years is too short a period to come to conclusion all is safe long term.

But the issue is as time progresses the medication has to increase as you are still on high carbs to the extent of 50% at least
When you have gone to 50% why not make it 100% and get off the rest of medications also
