Candied Sweet Potatoes: This serves 4
2lbs of sweet potatoes, peeled and cubed
2TBL of brown sugar
2TBL of maple syrup
1TBL of melted margarine
1/4 cup of orange juice
Salt & pepper to taste
Preheat the oven to 375F. Boil the potatoes for about 10 minutes. They'll be fork tender. Mix together the other ingredients. Drain the potatoes, and put them in a shallow casserole dish. Pour margarine mixture over potatoes. Bake for 30 minutes. Take out the dish and stir it well. Bake for an additional 15 minutes.
These potatoes are really tasty, and they reheat very well. You can top them with minced pecans (or marshmallows if you are my daughter).
