I've just re-started C25K. I'm on week 1. I prefer to run after work, I find that it helps me wind down. Now I will run later today, but then, due to how my shifts work out I will have to run tomorrow as well. It means, though, that I won't then run until Monday. Do you think that is ok?

You should always take at least one complete rest day between runs. Your body needs that time to recover and repair. You could always do something else on the days you cannot run though such as cycling or the Strength and Flex podcasts nhs.uk/Livewell/strength-an...
The rest days are sooo important as they are the days that make us stronger runners. Running two consecutive days is not recommended but a lot will depend on your age, fitness levels before you started running, etc. If you run today and then have your next run on Monday that will be less riskier than running again tomorrow and you'll be fine with this gap.
Longer rest periods are fine and can even be beneficial. Running on consecutive days isn't a great idea as your body needs to rest and repair. If you're young and/or reasonably fit and active you should be ok but personally I'd always try to avoid it.
