Hi Punkie1987 ,Sorry to hear about the anxiety from these symptoms. Definitely seek out a specialist as you should any time bowel habits change (even if this change started a while ago)
Many people who notice some type of GI reaction when they eat certain foods or have certain beverages, will try cutting one of them out for a few weeks to see how that impacts your GI system. You don't want to test too many changes at once because if you eliminate more than one thing from your diet, and your bowel movements improve, you won't know which one was causing the issue.
We are big fans of food journals but also keeping track of bowel habits, exercise, and any other relevant info. Doctors can often use this information to help determine what the potential cause is. An oversimplified example would be if someone was having diarrhea after having dairy. The most likely cause of that would that the individual has lactose intolerance.
