Generally, no. If you don't tell them you're bothered, they won't notice or care.
You have to answer these questions for yourself.
Nobody is in your head, no one reads your thoughts and no one else can heal your traumas and insecurities but you.
You keep asking "WHY"_____?
You've got to fill in those"blanks" with what is going to serve you well instead of repeating the same worn out cycles over and over, thinking it will yield different results.
The effort must come from within. Nothing external in the world outside your Mind and body will magically fix what's bothering you.
That is the journey and challenge only you can take.

This is not meant for anyone but YOU to figure out. That's why you have to work on yourself, for yourself, by yourself.
This is your life's challenge, not anyone elses. You've got to learn to teach yourself how to learn ABOUT yourself.
Are you spiritual, are you religious, what do YOU believe in? Start looking within for answers instead of hoping someone will cure you with a magic solution...it will be the hardest thing you've ever done, but, bottom line, you've got to do the work to enjoy the spoils.

Is it okay, to move when someone else moves? Like I find myself doing that a lot. I'll pay attention to someone and then flinch when they move. mostly my head darts. Is that okay? Will others care?
Perfectly all right! I have trouble with loud and unexpected sounds, too.,even indoors! Even a knock on the door will get me jumping and heart racing. For me it's down to CPTSD.

Hi Eric, I struggle with sounds, too. The TV is fairly quiet and then it's not! People who ring my very loud doorbell and then thump on the door. Next door playing car radios with the windows down. Enough is enough. I was in hospital once and pleaded with the nurses to stop flip-flopping up and down the ward all night. I was put into a side ward as I was told I was probably very noise sensitive. You may be the same. In my experience no-one cares that you are struggling. Do whatever you have to do to make life easier for yourself.
What do you mean no one cares? Do you mean they don't care respectfully or disrespectfully?
They are totally unaware of the noise they are making and they don't care if it upsets the likes of you and me.
