Hi! And good evening I assume. I'm glad this forum is helping you as it does me. I just finished a cupcake. I know... that's not dinner... but it was tonight. I'll try to do better tomorrow.

My early days to recovery from anxiety I did everything on jelly legs. If it can be done , it can be done on jelly legs. For my dinner tonight I had Brussel sprouts in lemon butter sauce, A BLT on toast, and spicy tomato sauce with cheese and pita chips. Yum. All left overs from the day before . I enjoyed it even more because I didn't have to cook. Pam

Wow I want it just the way you described it....sounds delicious. Do you enjoy cooking? Does it help keep your mind at ease?

sweetiepye profile image
sweetiepye in reply toJrick34

Yes I love to cook, to try new to me foods, and I like to mix up ethnic groups My favorite food is from the American South. For instance a mess of okra, fresh corn . tomatoes out of the garden maybe a little onion and a pinch of sugar. Sautéed in butter and served with corn bread. It's so good it makes me cry. I guess I love to cook as much as I love to eat.

All_alone profile image
All_alone in reply tosweetiepye

That sounds so good. I have not had okra in yrs. I'm very particular about my cornbread. I like it on the moister and sweet side.

sweetiepye profile image
sweetiepye in reply toAll_alone

Me too. I always add a small amount of sugar to the batter . There is an art to corn bread as in black cast iron and a hot oven.

All_alone profile image
All_alone in reply tosweetiepye

Yes there is an art to it and most people I know dont have it nor do I..

All_alone profile image
All_alone in reply tosweetiepye

Yum! I also want that!!! So... dinner at your place tomorrow? Lol

sweetiepye profile image
sweetiepye in reply toAll_alone

Our menu will be... bruschetta with pesto because I have a ton of basil in my herb garden. a wedge of iceberg lettuce covered in a blue cheese/walnut dressing. For our main course spaghetti ( see my profile page ) marinara accompanied by a loaf of ciabatta with garlic butter. A sparkling Rosa should take us through dessert....wait for it....Chocolate Pudding Cake. Lastly. I make an abundance of pasta in order to have some for breakfast next day. Dinner will be served at the right time. Pam

interesting, I didn't realize Chicago was known for hot dogs??? So what exactly makes a Chicago hot dog.....

Agora1 profile image
Agora1 in reply toAll_alone

A Chicago Hot Dog is an all beef hot dog on a poppyseed bun

topped with mustard, relish, chopped onions, tomato slices,

pickle spear, sport peppers and sprinkled lightly with Celery Salt.

Coming in for a close second is Chicago's Deep Dish Pizza. :) xx

All_alone profile image
All_alone in reply toAgora1

Wow! That's a lot of stuff to put in a bun. I would have to try one. I think I would prefer pizza over the hot dog.

Cereal is always a good late night food. I keep like 3 boxes of frosted flakes lol

I made a pot of gumbo and some cornbread!! It was pretty good. I’m up now at 1:30am looking out at the moon and eating a pb&j. Insomnia-Day 3

Jrick34 profile image
Jrick34 in reply to

I love gumbo!! Do you add okra? May I ask what's causing the insomnia?

in reply toJrick34

Morning. I don’t like the texture of okra do I never add it. It was just a basic chicken, sausage and shrimp gumbo! Delicious 😋. And of course I don’t mind you asking. I’m completely flooded with anxiety so bad sometimes that I just can’t sleep. I’m awake worrying usually. My father passed a year ago and I just can’t find the closure I need. On top of that, 5 days after we had his entombment my husband asked for a separation. I had to immediately take on raising my 3 boys (16,13,10) alone for a while. I’ve just felt lost honestly. So some nights I lay in my bed with the blinds open and look at the night sky. It’s beautiful and silent so I just let it put me to sleep. A lot I know-sorry- but the sad part is that was just 3 months worth of my year. The other 9mons haven’t been so kind either. I’m gonna post soon to open up a bit more. Thanks for the concern.

Jrick34 profile image
Jrick34 in reply to

Iam so sorry and please don't apologize. I, too, sometimes look out the window and dream what it would be like to not be dealing with anxiety. The feeling of lost can be strain and make you feel empty and unwanted but you are definitely not alone and if you need a friend at night then Ill be there. One thing I had to grasped is that I wasn't alone in my fight for wellness and you aren't either. Keep up your fight and stay strong....."Grow through what you go through"

in reply toJrick34

Thanks Jrick34. Feeling lost is definitely a crippling place to be. But I know eventually I’ll be better. I refuse to lie down and give up so I’m fighting as hard as I can. I may just take you up on being a friend at night. And please reach out if you need me too-I’ll be your night owl friend as well. Thanks so much for all your kinda words!! Have a great day. We got this.

Hi Jrick, Okra is hard to find around here so when I do I buy what I can afford and then fry gently with sliced red onions and baby tomatoes and a nice spoonful of honey and black pepper. I also had half a seeded brown bread roll and piece of cheese. (Protein!!) The rest gets frozen for another day. Nice to see you again tc.😺

Hi sweetiepye, I did the same with baby aubergine last week. I cut them in half and fried up in olive oil then added the sliced onions and baby tomatoes and sauteed til soft. And of course the honey at the end. Maz😺 x.

Hi Jrick, oh it's so easy and I bet you can get hold of Okra easily enough. Slice the okra and put in pain with some oil and add the onions and baby Tom's and honey and stir a bit then lid on for 10 mins or so and hey it's ready!!!! Let me know how you get on with it, give it a go it's good to experiment sometimes. Maz😺
