Just made this for the first time. I absolutely love Spanish omelette, but am trying to limit my carbs and find the perfect ratio of potato, sweetness from the onions and fat makes it just a little too moreish...
I made this using lots of grates carrot and swede to give it that substance, but without the carbs.
Ingredients:
About a quarter of a swede grated
1 carrot grated
1onion
20 green olives
30g feta
Sprinkling of parmesan
2 tsp olive oil
Some lettuce.... Yes, lettuce
3 eggs
Sautee the veg in 1 tsp olive oil and salt to taste until softened and tasting sweet.
Beat 3 eggs in a bowl. Add the veg and beat well into the eggs and parmesan. It should be pretty thick mixture.
Add back into the pan with 1 tsp olive oil and spread around the pan until even. Use a non stick pan!
Place a lid on and cook for about 10 mins on low.
Sprinkly feta on top and finish the top under the grill.
Eat hot or cool down and slice up to pack up and take on a picnic or for a easy finger food on the go lunch/snack.
It's delicious! I'm going to take it with me to work tomorrow. You could easily add things like ham, smoked salmon, chillis, bell peppers. I think the swede and carrot is essential to give it the right consistency. You can't taste them though!
