I had my 1st date night with my partner last night since having our 2nd child. I know I went about 1000 calories over & need some help/advice of how to stay on track so I can have a lb loss when I get on the scales on Thursday. Dont want it to ruin my whole week.

I'm afraid that weight loss isn't linear, Josie, so there are no guarantees for a 1lb loss, regardless of what you eat, or don't eat.
If you went 1,000 calories over your allowance, then you could cut back a bit, for the rest of the week, but don't go mad, or you'll get too hungry and are more likely to start eating the wrong things.
One blowout doesn't mean a wasted week and a maintain would be an excellent outcome. In future, try to plan night's out in advance, so that you can look at a menu and choose a lower calorie meal, or have a plan to alternate alcoholic drinks with water, or save calories in advance.
In the end, you had a lovely night out with your partner, which was long awaited, so no regrets!
