Roasted Beetroot Soup

Serves 4 - 6

Preheat the oven to 200c / gas mark 6

1 kg beetroot

4 cloves of garlic

2-3 sprigs of thyme

1 bay leaf

2 tablespoons of olive or rapeseed oil

1 litre vegetable stock

Sea salt and freshly ground black pepper

Scrub the beetroot well, wearing gloves to save your hands from staining. Place them in a roasting tin and scatter the garlic, thyme and bay leaf around them and use your hands to coat everything in the oil.

Add about a wine glass full of water, then cover tightly with foil.

Cook for about an hour depending on the size of the beetroot until a knife goes in easily.

When cool gently rub the skin from the BR and squeeze out the pulp from the garlic, then blitz everything in a blender with half of the stock.

Transfer to a pan and heat gently without boiling adding more stock until it's the consistency you prefer.

Serve with a dollop of yoghurt and scatter some chives on top.

Also nice with horseradish instead of yoghurt to give it a bit of a kick.

Ah that's not too bad! Sort of thing I'd do. Thought it might even been a misspell like bootreet or something! (Something else I'd do!). Yes think I'll pop out and get the ingredients this afto. I love beetroot. Keep you posted.

Who needs fireworks with your soup! I don't usually act so quickly but had time this afternoon so popped out to get some of the ingredients. Have just finished my first bowl and it was great! Couldn't get fresh thyme so used dried version (but eill use fresh next time). And so i added some sprigs of fresh rosemary to the roasting pan. Lovely. Stirred in teaspoon of horseradish. Amazing! thanks for the recipe morgancando. I am going to try it this week.. My only concern is that you put water into your wine glasses.. it caused me a lot of anxiety...!

I love beetroot - in Australia a "genuine" Aussie burger must have beetroot on it!

I remember making some beetroot dish some time ago - I don't remember what it was but I ate so much of it my pee actually turned pink - true story - it can happen! :)

I should have mentioned that side effect Dave1961 . That does happen and can give you a fright if you don't realise the cause.
