Cous Cous ideas!!

Does anyone have any .........not too technical ............ways of making cous cous more interesting.

It is just so easy to prepare but other people seem to make theirs so tasty

It tastes of whatever you out in it, I use a stock cube and add cooked veg like onions, red peppers et. Or chipped salad tomatoes and cucumber 😀 There is also a whole meal version available which has a better Glyceamic Load.

chipped tomatoes and cucumber ...is that just cut into chip shapes or actually fried?

Hi osci

I usually soak mine in a vegi stock cube.

Add chopped herbs ( chives, corriander, parsley,mint) either a mixture or just any one you like.

Finely chopped peppers and onion,either cooked or raw, gerkin, 1/4'd baby tomatoes. Sweet corn,

Splash out with your calories and add 1-2 tsp of nice oil.,lemon juice.

Cook as per instructions and drain. Add: finely chopped pecans, squeeze of lemon juice, some grated lemon zest, some fresh chopped mint, small amount of finely chopped shallot.

ooh........like the idea of adding some nuts..........lemon sounds good too.

Or toasted flaked almonds, toasted pine nuts... chopped dried apricots..... 🙂

60 gms Couscous

quarter veg stock cube made up to 75mls stock

8 to 10 cherry tomatoes quartered

Quarter cucumber cubed

Quarter red pepper diced

Quarter yellow pepper diced

Quarter can chick peas rinsed and drained

30 gms Feta cheese

For the dressing

1tsp Lemon juice

3 tsps Olive oil

pour stock over couscous in a bowl and cover with a plate

mix lemon juice and a little pepper then gradually mix in oil.Pour over couscous and mix with fork Mix in your veg and lastly the Feta cheese

Thats your lunch enjoy

a smidge of harissa or ras el hanout with a a finely chopped sun dried tomato

a finely chopped date and some chopped pistachios

some chopped porcini and the water they were reconstituted in used as stock for the soaking

chopped applea and walnut and feta cheese.

finely chopped crisp fried chicken livers

pomegranate seeds, chopped grilled halloumi, lemon juice.

ok - it was going well till i read the word "liver"!!! That is a definite no-no with me!!.

I have not heard of a lot of those ingredients - will have to look them up. Thanks

You could use any of the posted suggestions but with quinoa instead of cous cous, this too has a low glycaemic index. EJ

I'm also not a fan of couscous but I get a really nice mixed quinoa and bulgar wheat mix from Tesco and a lot of the ideas above would work well with that too😀

Lightly fry a few finely chopped veg e.g. onion, red pepper, courgette, add a spice e.g. cumin/caraway seed, add a few chickpeas and 50g couscous, and stir together for approx 1 min.

Then pour over about 200ml boiling water with half a veggie stock cube dissolved (the liquid should only just cover the couscous, about 0.5cm layer over the top, not swamp it).

Straight away cover with lid and remove from heat. Leave for 5 mins. Then stir in a few raisins/chopped up sundried tomatoes and loads of fresh chopped parsely using a fork.

Serve deli style as a side with lots of other nice veggies e.g. fresh chilli roasted beetroot, spicy rocket salad leaves, and lentil and cauliflower salad :)

I add finely chopped chorizo which has been dry-fried (so you can drain off the fat) - you can buy small packs in Waitrose and Co-op. Add chopped tomatoes and cucumber, and a little chopped hard goats cheese.

Sorry know this is not the correct place to post but I have been trying all day to post on Saturday weigh in and it would not let me. Have tried various posts to reply on but mo success. Not sure what is going on. Dug out my laptop and that didn't work either my daughter tried also. All this to say I have gained half pound. 12 71/2 last week. 12 8 this week. Me and technology are the very worst bed partners. Good luck to everyone.

when i log in using my work computer it will let me read but work computer security will not let me reply - it just comes up with the blocked message!!

Hi I tend to have cous cous with roasted veg selection of chopped veg covered with 1tbspn oil cook at 220 degrees for 40mins

The couscous I either add spring onions and/or sultanana and allow them all to soak with the hot water.
