This is a recipe I recently came up with which is lovely and filling as well as full flavoured and packed full of veg. I hope you enjoy.
For serving two people you will need:
200g butternut squash
1 courgette
2 mini corn on the cobs or handful of mini corn
1 onion
2 garlic cloves
2 peppers (any colour you fancy)
300g potatoes (Maris piper work well)
30g chirizo
2 tbsp reduced fat sour cream and chive
1 tbsp sunflower oil
Salt
Pepper
Cajun spice
This is a tray bake so everything goes in together and is roasted in the oven. Preheat the oven to 200c. Cut the butternut squash, pepper, courgette and potato in to chunks (roughly 2cm). Strip the garlic cloves and crush with the back of a knife. Put all of this veg into a large roasting tray and add the oil stirring the veg around to coat. Sprinkle over 2 tsp of Cajun spice (or more if you are daring!) and add salt and pepper to taste. Put in the oven for 30 mins. In the mean time chop the chirizo into 1/2cm slices and put to one side. Add the chirizo and corn after the 30 mins and turn the veg. Bake for a further 30 minutes and then serve with a tablespoon of sour cream. Enjoy!
