Tonight’s tea (for two - although I could’ve eaten the whole thing on my own 🤣).
The roasted veg were: butternut squash; courgette; kale; red onion; chestnut mushrooms; cherry tomatoes; red pepper; leek; garlic cloves in their jackets so they go all squidgy. On top is a ball of burrata (mozzarella which, when sliced open, releases the runny cheese).
