Cheese & onion pie with almond flour


The pastry couldn't be any easier: mix 2 cups of almond flour/ground almonds with 1 egg and pinch of sea salt. Mix and roll out. It'll be quite crumbly, but fit into a quiche dish or smaller dish if you want a pie. Slowly fry 3 sliced onions so they're caramelised. When cool, stir into 2 beaten eggs and handful of cheddar cheese. Bake the pastry base for about 12 mins, then pour mixture in and bake for about 25 mins on 200c.

The pastry is so easy.

Plus it’s what I use if I want to make keto bics. I just cut circles with pastry cutters & bake for 12 mins in medium oven 🧇

Very interesting. I didn't know you could get almond flour. Mixed with egg it sounds a bit like unsweetened marzipan.

The almond flour is finer than ground almonds and either are good. The taste is vaguely nutty but not overwhelmingly so.
