Morning All, it's a lovely day here today, I've been picking tomatoes and blueberries, shall have both for lunch. I've cooked some berrries in my Lakeland soup heating mug with 2 tsps sugar, I'll top that with 1 tbsp double cream and reckon that will be 80 calories.
I'm on a high having lost a couple of pounds, it gets harder as one ages and I'm 82. Thank you, you recipe posters, the recent omelette with Goat's cheese etc is lovely. A couple of ideas for the sweet toothed, Sainsbury's drinking chocolate, it does contain sugar, beware. I use two heaped teaspoons, add two canderel sweeteners, top with boiling water and a bit of milk, it fills a hole and a need.
I found a recipe courtesy of Waitrose, it is easy and quick to prepare and I think, very tasty. 227 can of chopped tomatoes, 1 tbsp pesto, 1 red pepper thinly sliced, 4 baby courgettes grated, 300g chicken breast fillets cut into thick strips, 40g Parmesan grated, 2 tbsps wholemeal breadcrumbs, 1 tsp chopped parsley. : Put tomatoes and pesto into the base of a heatproof dish, add courgettes and pepper and stir around a bit. Season and top with the chicken in strips. Mix together the breadcrumbs, Parmesan and Parsley and sprinkle over the chicken. Oven at 200 degrees and roast for twenty minutes. This serves two , 391 calories per portion. I tweaked it a bit, Passata instead of chopped tomatoes and added more breadcrumbs. I also enjoy the Hairy Bikers recipes, can recommend their Moussaka.
