Banana, Date and Honey cake

I am very pleased with myself today, not only have I started steroids at last and endured a morning of nausea, but I recovered this afternoon and made a delicious cake -and it's healthy too. It's gluten free and sugar free and it tastes like heaven :-)

8oz gluten free self-raising flour (available from sainsburys & other stores)

1/2 tsp cinnamon

6oz goat butter, softened (can use any butter or marg)

3 tbsp clear runny honey

1 tbsp Xylitol (natural sugar substitute 'Total Sweet' available from sainsburys)

2 eggs, beaten

2 medium bananas (total weight around 9oz with skin on)

4oz stoned dates

a handful of walnuts

1 preheat oven to 160'c/gas3/fan140'c

2 line base and long side of 1kg loaf tin

3 tip the flour, cinnamon, butter, Xylitol, 2 tbsp honey and eggs into large mixing bowl

4 Mash bananas and chop dates (kitchen scissors make this easy) and add to the bowl

5 beat altogether for 2-3 minutes until well mixed (can use spoon or blender)

6 spoon the mixture into the tin and smooth, then sprinkle with walnuts

7 bake for 1 hour until firm on top

8 cool for 15mins then remove from tin and cool on wore rack

9 drizzle remaining honey over the top

AND THEN EAT!!

Hi,

Sounds so yummy:) I am wondering how you have found being on the steroids as I am seeing the rheumy next week and it would be good to have some feedback. Does it help with the stiffess/aches. Although I have had 3 steroid injections todate the last one only lasted 3 weeks so it may be that steroid tablets are the answer. I guess I am fearful of putting on weight as I have just lost 1.5 stones and would still dieting. I am also worried about having mood swings and whether steroids affect this? Anyway Dryad so glad you have had a good afternoon baking:0 Marion

Well I'm only on day 2 of 10mg steroids so I don't have a lot to report yet, except that yesterday I felt immediately nauseous then euphoric then my stomach hurt a lot for the rest of the day and I felt a bit low by bed time. However today the effects are far less strong! I feel hopeful today. I hope they work for me -it will be so great to be in less pain!

High dose steroids can increase your appetite and give you a feeling of well being. I'm now on 5mg and my appetite is back to normal. Your cake Dryad does sound yummy, i,m gluten free myself.

Yes I am aware that i could put on weight but I'm not concerned cos that crazy diet I'm on meant over the past 6 weeks I lost half a stone so I could do with putting back on some weight!! My mum thought I looked starved! I think a little of what you fancy does you good, hence the effort to make the odd cake! I hope you get a chance to make one yourself -tiz yummy :-)

Thanks for the recipe. I adapted it for my needs and made a chewy bar.

Side Note : Xylitol is toxic to dogs (even in small quantities) and has been known to cause some sensitive individuals gastrointestinal upset bloating.

Yes I know about the tummy upset using Xylitol -I put too much in one cake I made once and it made me very windy bloated and uncomfortable! Never again! Didn't know about dogs.

Xylitol is very low GI which is good, agave nectar is lower GI than the rice syrup and date syrups I used.

Stevia is my choice option for a sweetener.

I grow the Stevia myself so I know the product is pure.

Ha ha ha ... windy blast fast Dryad!?! :-D

Windy bloat is not funny while it is happening I know I know I know.

Keep the recipes coming. Great to have a positive tangent.

I shall find then post my adrenal recovery green soup recipe. Good cure-all. Easy peasy to make.

Adrenal Recovery Soup

The following vegetable soup recipe has proved helpful in adrenal support. It is rich in minerals and alkalinizing to help balance the acidity that usually occurs in people experiencing adrenal fatigue and stress. I like to use a cast iron pot for the added benefit of iron.

• 16 oz. green beans

• 1 cup chopped celery

• 1 zucchini, sliced

• 1 medium onion, chopped

• 1 cup tomato juice

• 1 cup spring water

• 2 tbsp. raw honey

• 1 tsp. paprika

• 1 cup chicken broth

Combine ingredients and simmer for one hour until vegetables are tender.

I suppose salt and/or pepper could be added to taste.
