Last night for dinner, we had the first pieces of the Gluten Free Quiche. The quiche is made with Swiss Cheese, Cheddar Cheese, bac'n pieces and brown long grain rice with mustard and liquid eggs. This is a picture of it from today's leftovers at lunch. The total carbs. with a dinner is 54. When you have leftovers at lunch and add a Greek yogurt in on the side, it's 38. Having it both times was really good, and I enjoyed it. Quiche is one of my favorite types of food to have during lunch and/or dinner.

I love Gluten Free Quiche. The one I make is crustless. So easy to make. Last week I made this for a book club get together. Everyone liked it. Had to make it meatless as the host is a vegetarian.
Don't have any pictures cause the quiche is in our tummies.
Make mine with shredded cheddar cheese and will add either some mozzarella cheese or swiss (whatever I have on hand). Add some chopped red and green peppers and onions (from a frozen bag of peppers and onions). Use Pamela's flour (requires about a cup). Add a touch of salt and pepper. Eggs and milk. (Think that's all the ingredients). We have ours with a side spring salad and yogurt dressing. So darn easy to make and lots of variation possibilities like adding mushrooms, spinach, bacon and so on. Yum.
Your recipe with rice sounds interesting. May try it!
Good morning, sorry I’m commenting a bit late, I only just noticed your post. Your quiche sounds lovely but I’m not a great cook and wonder if you could post the recipe please? I notice the ingredients but have no idea of the quantities.Thank you!
If you use bac’n pieces, pour a capful in the lid from the container and then sprinkle the pieces into the dish/baking ’pan’. Add the cheese of your choice and cover everything. Pour in the liquid egg whites (don’t use the entire container unless you have more than 2-3 people). Put the entire bag of rice in the dish/‘pan’ and microwave everything after cooking the rice in the bag, first. Then put everything in the microwave for 20-30 minutes and set the timer for 10 minutes standing time. Don’t open the microwave until the alarm is off. Enjoy!😀👍
Thanks for that, handy that it can be done in the microwave! Just a question about the egg whites. How many real egg whites would I have to use or could I use whole eggs instead? I have no problem with egg yolks as I am on LCHF.
