This macaroni and cheese is what we are going to be having for dinner tonight. It’s gluten free and my Niece helped cook it for my dinner for later. The leftovers will be for lunch tomorrow.πŸ˜€πŸ‘πŸŒˆ

Hey Leah your macaroni cheese looks delicious I think that is so good you making this with your niece as it will give her confidence in cooking.

You enjoy your dinner tonight and leftovers tomorrow. πŸŒˆπŸ‘πŸ˜€

Thank you, Jerry! :-) When it came out of the oven after cooking, the cheese on top of the cream cheese that got used got nice and crispy brown. Never saw it do that before when I did this a few times ago, so that's a nice surprise and one good reason to take a picture! :-)

In a few weeks, we will have to cook more gluten free cookies and brownies! :-)

I am wondering how you made it gluten free-looks cooked perfectly and I β€œcan almost smell it”

The bows are made from corn! :-) Thank you! We are having some again today for lunch with some tuna and fake bacon bits mixed in. :-)

We add in cheddar cheese, cream cheese and colby jack, milk (with fat in it) and the elbows. Put it in an oven and cook for 30 min.-1 hour. Then, mix everything up in the pan and put in the refrigerator to cool. Warm up each piece in a microwave/oven for 1 minute before eating ( if 30 seconds doesn't warm it up enough the first time). :-)

I have wonderful neighbors. One amazing Vietnamese family brings me pho-soup and rice soup. A smaller grain, with all kinds of greens in it-loving it now

Keeping posting good things to eat-I need to eat well, problem is small amounts, Dr for that

I eat a low carb high protein diet and gluten free. Would you like me to send a message to you for other meals/snacks that I eat?

Hidden
Hidden in reply to Activity2004

Yes, absolutely. For some reason I am now eating small amounts. Example, soup given yesterday, lasted 2 days worth. Today corn on cob, interestingly, they boil with husk on. I was not familiar with that. Then if sitting, it can be microwaved to re-heat. Unique to me, just wonderful family

You’re welcome! Thank you for letting me know. Anything you allergic to food wise?

Hidden
Hidden in reply to Activity2004

No, but trying to stay away from too much salt/sugars thank you for asking that-so I am in for healthy, small portions ( can really-heat) and soups

It’s not an allergy but for whatever reasons , peppers, onions I remove if on my plate. Thank You for being specific

Activity2004
Activity2004Administrator in reply to Hidden

It’s not a worry. I don’t use peppers in a lot of my meals unless it’s stuffed peppers or in some salads. But, you can always leave them out of the salad if you see something you like. We change some recipes for what we like/don’t want.πŸ˜€πŸ‘πŸŒˆ
