Sweet Potatoes Fritters with Black Bean Salad

This was my Lunch today. I like sweet potatoes and try to cook them in different ways. Today I decided to make some fritters and beans for protein and fibre.

Enjoyed it, simple and light , easy to make

You are welcome, KBMosia. Yesterday I made a black bean chili for dinner and today I am doing a veggie soup with more black beans. I find that the organic black beans are far less gassy and easier to digest. I used to use white beans when I made Kale soup, but now I am experimenting with the black ones. I think I like the white beans better when it comes to some soups.

beans are supposed to be good for our health as they have protein and fibre . I also prefer white beans for soup

I love all beans, always have. I like to use the crockpot for my vegetarian baked beans, they turn out so well.

Beans have protein and fibre, like you I love them. I try to add them to soup, chilli. Sometimes I just mash them add to pitta bread and mixed salad for a quick lunch.

Thanks. I like to add a variety of veg to my diet, this was tasty. We are told to eat a rainbow of veg for good health. I do try

Thanks. I like it because it is not a heavy meal, it's a nice light lunch that is healthy as well

They are cooked and served cold. You can use tinned ones as well
