Lunch Today ( 9-13-2021)

Hi everyone,

For my lunch today, I had: 4 Mixed Cheese Blend/Shredded, black beans, mild chunky salsa, gluten free tortillas and a Greek Pineapple on the bottom yogurt with iced tea. This was all from last night's dinner as leftovers for this afternoon/today. The entire meal was: 43 carbs. and I really enjoyed it. It was low carb. and extra protein, so I don't feel hungry too early before tonight.

For dinner tonight, we will have: hamburgers ( Vegan/Vegetarian), watermelon, ice cream, coleslaw and diet peach iced tea. Not sure, yet of the carb. count, but when I figure it out later, I will let you know.

It was really delicious and not too much spice. The pineapple Greek yogurt went well with the tortillas/enchilada.😀👍

Thank you! We will be adding corn 🌽 to the dinner tonight.

Black beans are one of my favorite beans to have with salsa and cheese/tortillas.😀👍

The total amount of carbs. for dinner tonight was 80.

Looks good, I like the idea of the black beans in it, I have some dried black beans that I think I will put in some water to soak for the day and work out later what do with them..they are very nutritious..last time I used to to make a dish from Cuba that I found on YouTube..I love beans and lentils of all varieties 🙂

Do you like mild salsa? We mix the beans and salsa together. When you are ready with what to do with the beans, please post it/them anytime.😀👍

I do like salsa...but haven't made it in a very long time. I see how with the beans, quite often I cook dried beans or lentils, strain them and put them in the fridge overnight to used the next day..Have already put them in to soak. 😊

How long does it take to soak in the refrigerator?😀👍

I don't put in the fridge until after I cooked and drained them..I wash them and just leave them on the kitchen worktop for hours if not all day and wash them again before I cook them..i just put enough for myself normally.
