Hi all , You know what I don’t include peas in to my diet because I’m always going for bigger vegetables like green beans , broccoli and sugar snap peas .
I made this pea, mint and feta omelette this morning which was really nice .
Going to make a risotto soon with peas included with perhaps chorizo or mushrooms!

That omelette looks very good Richard, I like the combination of peas, mint and feta cheese and had some little pastries with that filling the other day. I do like fresh peas with mint too. I look forward to seeing a photo of the risotto. 🙂
