This is what I had for dinner tonight. Itβs a gluten free square of Macaroni and Cheese made with cheddar cheese and chickpea noodles/rigatoni. The entire meal was 45 carbs. without dessert. With dessert, the carbs. are 65. Everything was really delicious and I enjoyed it. I will have the leftover square for another meal and mix tuna, peas and carrots together. I will take another picture when I get the tuna, peas and carrots mixed with the macaroni and cheese soon.

We are dairy free too and I have been enjoying garbanzo-bean based mac made with Miyoko's cashew-based Mozzarella. I flavor it with mustard, salt, garlic and whatever else strikes my fancy (like Nutmeg or Truffle Oil) and loosen with with homemade almond milk. The almond milk thickens when heated and it's just wonderful. Even my picky son really likes it. This dish is like a little miracle.

Thank you for letting me know that about what you use for your macaroni and cheese. It sounds really delicious. I'll have to see if we have some of the items left in the house and try them with the macaroni and cheese the next time, I cook a panful.
We had the leftover macaroni and cheese today with tuna and peas mixed in for lunch. It was really good.
Leah looks delicious, and second meal sounds equally as good. Well done, I was raised on baked mac & cheese and since been on low carb diet , I have missed this dish considerably!! Well done !!! Ron

You can make a low carb substitute: microwave cauliflower coated with a little olive oil (or roast in oven) then use microwave to melt grated sharp cheddar into a little full/heavy cream. Mix the sauce until smooth. You can season with a little mustard or pepper or garlic before mixing with the hot cauliflower. It tastes pretty good and is very low carb!
Be generous with the sauce though:o)
This sounds really delicious for an alternative, so the Mac and Cheese are lower carb.. I will have to see if we can get some cauliflower next time, we do our list of what we need from the stores. Thank you for the suggestion.
Ha, I was replying to Ron, but if you want low carb too it really works and is tasty. Also, try crisping up the cauliflower in the oven a bit first.
If you are trying to be LCHF like me add some crispy bacon, too. That makes it even tastier! And higher fat, which is good for my diet :o)
Thank you. I actually have been on a low carb.-high protein and gluten free diet for a long time. I notice that when the protein is not high, the blood sugars go too high, so I have to try to fix that later in the evening. Crispy cauliflower sounds really good. Does fake/soy bacon work when mixing everything together for the recipe?
I've never tried anything but real bacon...but I try and keep my fat as high as possible (like 80% of my calories at least). I watch my carbs AND my protein. I think your blood sugar would go down that way too--the key is keeping carbs low.
Are you a vegetarian? If so, you know what I would do....fry up a bit of onion and garlic and top it with that! Make sure to add a lot of cream and cheese.
BTW, probably fake bacon is fine, but I'd check to make sure it has no added sugar or starch. That is sometimes a problem with fake foods.
PS. I should mention: you can't eat such high fat unless you really cut your carbs...but you probably know that. It's kinda one or the other. I think the worst combination is high of both. I keep my carbs below 30 grams most days. Basically keto. It works really well for me.
That's why initially I was replying to Ron. I don't mean to imply this is a good idea if you are counting calories!
But anyone can substitute cauliflower :o)
