Another 'good' Meal with Michael, my neighbour

Dear all,

yesterday I went to the Butchers, near my Mother's Flat, and bought some 'Lemon/ Lime Chicken Quarters'.

This afternoon I cooked them for myself, and my neighbour Michael, VERY good too! I put the oven onto a 'Moderate' Heat, about 150- 170 (3 to 3.5 gas), and left it to warm. I have a deep Enamel dish, which I oiled and set aside.

Whilst the oven was Heating I cut a large onion, into fairly small chunks, half of which I put into a frying pan- along with some garlic. (the other half I bagged, labelled then froze.) I added oil to the frying pan and turned on the heat- I then gently fried the onions, covering them to begin with. I then put some Brown Rice on to boil. (slightly 'salting' with sea salt)

I then unwrapped the Chicken pieces and lay them in the Dish, put some Foil- over the Tray- before putting it into the oven (at the top). After about twenty minutes, or so, I turned the chicken, removed the cover and added some stock (I used a mixture of chicken and vegetable- though it probably doesn't matter- avoid Oxo though). I kept some of the stock 'back', for later.

Once the rice was cooked I added it to the onions, in the frying pan, along with some Worcestershire Sauce. After a few minutes I added some sweetcorn and increased the heat. (I also 'basted' the Chicken, once or twice, to keep it moist.)

As the onions/ rice mixture cooked I slowly adding, the remaining Stock, allowing the rice time to absorb the fluid.

I served the two, alongside each other, along with the 'juices' from the dish. The result was DeliciousπŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹.
