Monday Dinner: Gluten-Free Vegan Pad Thai. πŸ˜‹β€οΈπŸŒΊ

I made pad Thai for dinner tonight. πŸ˜‹

I’m so happy to find Thai kitchen Gluten-free rice noodle to create my own dish.

Cooking instruction:

Add noodles in boiled water for 5 mins. Rinse with cold water and set aside.

Make sauce: grated ginger, sesame and chili oil, 1 teaspoon of black bean paste.

Scramble eggs separately and set aside.

SautΓ© brussel sprouts, and red onions in garlic sauce and sesame oil.

On low heat pot, mix all together scramble eggs, bean sprouts with noodles in the prepared sauce.

I like to have crushed peanuts with noodles and sesame seeds with mixed veggies.

Squeeze a little bit of lemon and a side of fresh chili vinegar. It’s a spicy dish. πŸ˜‹

Dessert: Mango.

I'm going to hypothesize this meal is a good source of vitamins A,B and CπŸ‘... Gluten free pad thai looks like something I definitely would likeπŸ˜‹. Have a good night.πŸ˜ŠπŸ™πŸŒŒ

I think it was the dish I eat almost daily when i first come to Thailand 14 years ago. Pad Thai prawn, I still go to the same street food stool next to the beach where I use to buy it from every now and then..3 minutes and it's done 😊 wonderful.

I tried out Thai food many years ago and found it acceptable.

Hi Catgirl, I understand how Thai food can typically have strong flavor of fish sauce and on the sweet side but you can make yourself too! πŸ˜‹πŸ‘

Baby the cat has eaten leftover curries since she was a little kitten!

There's a place in the city centre called Pho in Cardiff who do Vietnamese food which we would like to try out.

Wow Baby can handle curries, she has strong stomach then. Sonya is very sensitive. One time, she ate off a piece of my oatmeal cookie and it was bad. πŸ˜…

Please do try the Vietnamese place and let me know. Pho soup is the most popular one. If you like dried rice noodles they have good selections also. Don’t forget jackfruits salad is amazing, let them know which protein you like for the meat or non meat. πŸ˜‹πŸ‘
