Here's what I made for dinner tonight its quinoa green lentils and veggies cooked in my slow cooker with spices and a little gram flour to thicken. It's definitely Autumnal food and it's starting to feel like Autumn, it is the Autumn equinox next Tuesday anyway.
I love quinoa as it has these little curls when cooked and it is action packed when it comes to nutrition so with lentils and plenty of veggies is a healthy balanced meal, its gluten free and plant based.
Thank you Zest its getting noticeably darker earlier every day too. π
We tried quinoa and found it acceptable and often enjoy lentil soup as well.
Tonights dinner here was jacket potatoes, haggis and mushy peas which we enjoyed.

One good thing to have come out of all this is I'm a lot better at cooking than I used to be as we cook at home more now than we used to and will carry on with in the future.
Thanks Isabelleta i used a tin of organic green lentils some diced onion mixed frozen cauli broccoli carrots peas and red/yellow peppers. I mixed about a desert spoon of gram flour to cold water with cumin coriander ginger turmeric and black pepper with yeast extract and left it to cook in my slow cooker. I par cooked some quinoa before adding that. So it was all very easy as I prepare and freeze quite a lot of veg.
Thank you very much for all the information. Will certainly be making it. Hope it turns out as good as yours. π
