So I made some and served them with salad for dinner plus a little sour cream and sweet chilli dipping sauce.
I washed, dried and cut up the potatoes then added them to a bowl containing olive oil, salt, pepper, garlic powder, paprika, oregano and rosemary. Once they were coated in the oil and spice mix I cooked them for about an hour at 200 degrees C.
It was a tasty vegetarian dinner.

I use an air fryer to make these. Potatoes chopped to size, soak for 30 mins in a bowl of water, drain, rinse under running water, dry thoroughly, return to bowl, add teaspoon of oil and seasoning and coat thoroughly. Into air fryer and cook for 30 minutes at 200c or chip setting: shaking gently a couple of times. If you want the centre nice and fluffy, boil the potatoes for 5 minutes after rinsing etc.
Make chips exactly the same, sweet potato or otherwise. Much better than frozen, no additives, no salt (carbs obviously) but great wedges or chips and very economical.
