Here's what I made for dinner tonight and it's an easy and wholesome meal as I used a tin of organic butter beans some frozen farmhouse mixed veg with organic onions softened in olive oil.
The dumplings are made with 175g 1/2 half chickpea flour and GF self raising flour, 2 free range eggs, 1 teaspoon baking powder, a little chilli ginger black pepper, parsley and a little olive oil whizzed them up into a ball of dough shaped and put on top of the stew and left them to cook for around 15/20 mins. until they had more than doubled in size and were cooked through.
I enjoyed it very much as it feels like stew and dumpling weather, so that's my excuse...
This is a lovely meal for dinner. Perfect temperature for it, too! The dumplings look fantastic! They remind me of the matzah balls I had in chicken soup for Rosh Hashanah recently.
