Hi, I am trying to become more aware of what I eat and how I eat it. I find myself very often just randomly eating in front of the fridge while I decide what to eat! Anyone has any advice on how to become more mindful and stop these random eating habits?

I'd say the first step is to not have things in the fridge or cupboards that you can graze on.
Would also suggest:
1) Setting aside specific timeslots in your day for cooking so that you're not always looking for something quick and convenient. Likewise, allot yourself some time for researching new recipes you might like.
2) If you find yourself always wondering "what on earth am I going to eat today?" it's possible your diet needs some revision. Until I fixed the way I eat (ie., the sorts of things that I eat) I used to endlessly crave variety. I suspect now that that was my body seeking out things that it desperately needed, and/or rejecting things that I was giving it too much of. I now eat pretty much the same things every day and I don't get bored with them. This takes away a lot of decision-making angst!
3) If you address (2), you should find that you can stick to the same few meals on rotation, and possibly the same thing for breakfast every day.
I am sometimes like that. I feel starving so I eat lots of crackers an hour before tea!
I suggest find 3 or 4 meals that you can batch cook and freeze so that you will always have something ready to defrost and reheat. For me, it's veggie curry, veggie chilli, soups, and tomato based pasta sauces.
I always have a jar of red pesto sauce and a jar of black olives in the fridge so I can make a pasta dish very quickly. I supplement the sauce with whatever I have in, mushrooms, diced courgette, chopped bell peppers, fried gently in olive oil while the pasta is cooking.
It helps to make a shopping list of essential items.
